Sunday Dinner: One ball of pizza dough - 3 ways!
1 pizza dough - 3 different pizzas!!
Man oh man did dinner come out awesome tonight!!! I am so mad at myself for not taking pictures of the end results - but I guess my family and I were way too hungry and we ate the pizza's before I could even think about taking any pictures. Anyway, I had a ball of pizza dough from Trader Joe's in my fridge that needed to be used so I decided to make pizza for dinner. But I also wanted to use up some veggies and cheese's in my fridge but I knew that my kids didn't like some of the veggies/cheese and well...I just decided to make 3 smaller pizzas with the one ball of dough that I had. Now the 3 pizza's that I did make did require some prep time during the day but boy did they come out delicious and everybody was full and happy (and no leftovers)!
I actually had about 1.5 lbs of pizza dough and from this I split it up into 3 half pound balls and rolled them out. For the first pizza (inspired by California Pizza Kitchen), I caramelized 1 large onion for my Caramelized Onion, Goat Cheese and Arugula pizza. I placed the caramelized onions on some marinara sauce, then topped with crumbled goat cheese and baked. While the pizza was baking, I tossed a couple of cups of wild arugula with some extra virgin olive oil, kosher salt and balsamic vinegar. Once the pizza was done, I placed the arugula salad on top to wilt, cut and serve.
For the second pizza, I also sauteed some sliced baby bella mushrooms, 1 red bell pepper and 1 yellow bell pepper with some olive oil, salt, Italian seasoning and balsamic vinegar. This mixture was topped with part skim mozzarella cheese and Italian seasoning.
The 3rd pizza was a plain cheese pizza for the kids (they also ate some of the veggie pizza). Anyway, aside from the initial prep work of sauteing the veggies and caramelizing the onions (about 45 minutes to 1 hour of work), making the pizza's took no time at all in the oven on pizza stones. I baked the pizza's at 425F for about 8-10 minutes each. I made 3 pizza's which fed my family of 5 and my parents - with not a single slice leftover!! Sorry there were no pictures to show but believe me, they were awesome and everyone enjoyed it. I love making homemade pizza - you can control what ingredients/toppings you want on your pizza without being charged an arm and a leg for each topping and because you can control what goes into and on the pizza, you can control the nutritional content! A very easy, healthy and delicious alternative to pizza delivery. So the next time you're at the grocery store, pick up a ball of pizza dough and try making homemade pizza for the family - you'll skip on the delivery in the future!! Enjoy...
