Recipe - Base Lasagna Recipe

Let's face it - all kids love pasta!!  What better pasta dish to make for your kids than lasagna!  So here is my base recipe for any lasagna.  You can add anything you want to the ricotta filling, meat and/or veggies. Or better yet, layer this ricotta filling with the bolognese sauce I posted earlier for a delicious lasagna.  Some lasagna recipes call for a bechamel sauce (or white sauce) but my family and I prefer this ricotta filling instead.  The end result - a healthy and delicious meal that everyone will enjoy, not to mention a great dish to entertain with family style!

No Fuss Lasagna
Boil lasagna noodles (about 12 noodles), according to directions on package.

Saute (low-med heat) with olive oil -
garlic, finely chopped or grated (as much as you like)
red pepper flakes (optional, as much as you like)
1 bag fresh spinach
1 container sliced baby bella mushrooms
salt and pepper

Mix in med/large bowl -
12oz part skim ricotta cheese
1 egg
salt and pepper
onion powder
garlic powder
fresh chopped garlic
italian seasoning
about 1/2 jar to full jar (depending on taste) pasta sauce (any flavor)
a couple of handfuls of mozzarella cheese, shredded and mixed italian cheese, shredded (optional, you can just use mozzarella cheese if desired)

Then add sauteed spinach/mushroom mixture.

To assemble lasagna-
In 13x9x2 pan, pour some pasta sauce on bottom of pan, lay down 3 lasagna strips,
spread ricotta mixture on noodles, add pasta sauce on top, then spread cheese on top of sauce.

Layer noodles, ricotta mixture, sauce and cheese again for a total of 3 layers.

Top layer of noodles, sauce, cheese (lots of it) and italian seasoning.

Cover w/alum foil and bake about 30 min at 350F. Take foil off and bake another 20 min until cheese is bubbling.

Remove from oven and let lasagna set for 15-20 minutes (or it will separate when you take it out of pan).

You can substitute meat or any veggies (sauteed first) into the ricotta mixture.  Whatever the kids and family prefer.  This is a great dish to make ahead on the weekend and serve during the week with a fresh salad and some dinner rolls.  The perfect meal for a busy family...ENJOY!
