Recipe - Sunday Night Dinner: Grilled Pizza(s), Caprese Salad and Marinated Strawberries & Marscapone in Phyllo Cups

With the weather being so awesome lately, we decided to fire up the grill and grill something, but what??  Pizza of course!!  What, pizza?  Yes, pizza.  Pizza cooks so fast when "baked" on the grill and tastes amazing.  I simply rolled out some store bought pizza dough (Trader Joe's) and placed it on my pizza peel (on some corn meal to help it slide off of the peel without any sticking issues).  I let it "bake" on the grill for about 4 minutes, placed it back on my pizza peel grilled side down, added my toppings and back on the grill until the cheese melted, about another 4 minutes.  Of course with this method, you have to have all of your ingredients ready before you get the dough on the grill but it's so worth the extra effort in the end.  I made 2 pizzas last night - the first one has become our favorite: goat cheese, caramelized onions and arugula, and the second one was a caprese pizza with fresh tomatoes slices, fresh mozzarella cheese and fresh basil leaves.  We coincidentally had a Caprese Salad as a side dish which tasted different from the pizza yet yummy nonetheless.  We finished our meal with a delicious dessert (courtesy of Rupa) that was quick to pull together and required very few ingredients.  The dessert was marinated strawberries on a marscapone-honey mixture in a phyllo cup.  The strawberries were diced and marinated in a small amount of balsamic vinegar and seasoned with a pinch of black pepper.  The recipe she used called for a chiffonade of fresh basil but I think we will replace it with fresh mint the next time we make this dessert.  The filling was a mixture of just marscapone cheese and 1 T of honey mixed together.  The result is a simple, but complex dessert that leaves your meal completed and your tummy full but not overly stuffed!
